Many cooks try to get creative in the kitchen without having the fundamentals down, which produces extremely varied results.
To make sure that the most consistent results are achieved with a burger press, it is important to also use an ounce scale. Most burgers fall into the 1/4 to 1/3 pound range, or 4 and 6 ounces, respectively. When you are cooking the same weight and size burgers every time you can plan out their cooking times almost scientifically, and get the level of doneness you want every time.
If your burgers are bloating in the center while cooking, an easy tip to prevent this is to take your thumb and press an indent into the center of the patty before it hits the grill. The meat fiber that is compacted in the center of the patty will keep it flat and level all throughout the cooking process. This is one of the oldest chef's tricks in the book for cooking burgers.
